This is a great as cooler on a hot day or as a mouth watering palate cleanser at the end of a meal. Using tinned mango slices means you don't get yourself and your kitchen covered in juice.

Cooking Instructions:
Combine the sugar and water in a small saucepan over a medium heat.
Stir until the sugar dissolves. Brush down sides of the pan with water to ensure all sugar crystals dissolve.
Boil for 2 minutes, transfer to a small bowl and cool to room temperature.
Combine cooled sugar syrup, sliced mangoes, 2 tablespoons of lime juice and egg white in a blender. Blend until smooth. Add remaining lime juice to taste.
Transfer to a plastic container and place in freezer, stirring every half hour for the first 2 hours to break up any crystals. Alternatively, freeze in an ice cream maker.

60ml lime juice
1 egg white
