Bramley Apple Souffle Pancakes

Pancakes:
Whisk plain flour, milk, eggs, and sugar together, strain then rest for 1 hour.
Make 6 large pancakes by pouring a thin layer of batter in a hot frying pan, cook until golden on underneth side then flip and cook the other side. Repeat until you have used all the batter and have 6 pancakes.
Filling:
Whisk the egg whites until stiff, fold half in to apple puree, then carefully fold in the second half.
Finishing:
Lay out the pancakes, divide the apple mixture onto the centre of the pancakes.
Roll up the pancakes and lie on a baking tray, dust with icing sugar.
Bake in a hot oven (180c) for 3-4 minutes.
Serve with whipped cream.
