Goose Fat Roast Potatoes

There is much debate about how to create the perfect roast potatoes. The art is to get them crispy on the outside and fluffy in the middle. This is what works best for me.

Cooking Instructions:
Preheat oven to 200ºC.
Peel potatoes and cut into large chunks.
Par-boil in salted water for 10 minutes.
Drain the potatoes and place them back into the saucepan.
Hold a lid on the saucepan and shake vigorously to fluf them up. (At this point in time Nigella adds semolina to give them extra crunch, but personally I find that it's all about how hard you shake them)
Add a generous amount of goose fat to to a roasting tin and place in the oven until extremely hot.
Carefully add the potatoes to the roasting tin and roast in the oven for 30-40 minutes (or until golden and crispy), turning half way throughthe cooking time.

Used goose fat for my potatoes at the weekend for the first time and they were the best I have ever done.
