Baked Apples in Maple Syrup

Preheat the oven to 190ºC.
Core the apples and stuff the cavities with the dried fruit mix.
Place the apples on an oven-proof dish.
Combine lemon juice, apple juice, maple syrup and spices in a mixing bowl and stir together, then pour over the apples.
Bake for 45 minutes, basting frequently.
Serve hot with whisked double cream.

4 large cooking apples
Juice of half a lemon
240ml apple juice
50g dried mixed fruit
120ml maple syrup (has to be pure maple syrup as maple flavoured syrup doesn't work)
¼ tsp cloves, ground
¼ tsp cinnamon, ground
