Proscuitto, Bean & Goat's Cheese Crostini

Cooking Instructions:
Pre-heat the oven to 170°c
Add a spash of olive oil to a small casserole dish and heat on the hob, then add the crushed garlic cloves and cook until soft.
Add the butter beans, lemon juice, thyme leaves, red wine vinegar and cook for 5 minutes, stirring regularly.
Now add the lemon zest and thyme, season and place in the oven and roast for 10 minutes.
Once cooked add the goats cheese and more extra virgin olive oil if needed and blend until smooth and silky.
Grill the slices of ciabatta, while they're still warm, rub each slice with the cut side of the garlic, and pour a little olive oil over each slice.
To serve:
Spoon the topping on each of the warm crostini's, then place one slice of prosciutto ham on top and drizzle with a little olive oil, if you are left with any thyme leaves sprinkle them on top.

For the topping:
2 x 400g tins of butter beans, rinsed and drained
Goats cheese x 150g
Extra virgin olive oil
Crushed garlic cloves x 3
Thyme leaves x 1 bunch
Juice of 1 lemon & zest
Red wine vinegar x 25ml
Prosciutto x 12 thin slices
Sea salt
Milled black pepper
For the crostini:
Ciabatta bread cut into 1.5cm slices
Garlic clove x 2 peeled & cut in half
Extra virgin olive oil x 15ml
