Jamaican Style BBQ Chicken Legs

This great summer BBQ dish takes its inspiration from the Caribbean and is my adaptation of a Gordon Ramsay recipe. Great food for eating in the garden with a chilled beer and sharing with friends.

Mix together the marinade ingredients.
Separate the chicken legs into thighs and drumsticks.
Add the chicken pieces to the marinade and leave for at least 2 hours, but preferably overnight.

Cut the unpeeled pineapple into eight wedges. Cut out the tough core and discard. Place in a shallow dish. Pour over the honey and leave for 1 hour.
Cook the chicken on a barbecue for 35-40 minutes (until thoroughly cooked through). Turn the chicken and baste with extra marinade occasionally during cooking.
Add the pineapple, skin side down, to the barbecue 25 minutes before the end of the cooking time.

Serve with rice or a green salad.

If it's not BBQ weather try cooking in the oven instead.
4 chicken legs, separated into thighs
and drumsticks

For the marinade:
75ml dark rum
1 tbsp chilli powder
1/4 tsp Tabasco sauce
1 tbsp cane molasses or dark treacle

1 fresh ripe pineapple
3 tbsp runny honey
