This Caribbean inspired recipe is hot in every sense of the word.
Great for barbecues or can be done indoors.
Because of the marinading time it does require pre-planning, but it?s well worth the effort.

Cooking Instructions:
Mix the marinade ingredients together.
Pour marinade over the chicken and mix well.
Cover and refrigerate and leave to marinate for at least 2 hours.
Heat oven to 190ºC.
Remove chicken from the marinade and place on a lightly oiled baking tray (retain marinade mix).
Place in the oven for 30 minutes.
Remove from the oven, turn chicken and baste with the marinade mix.
Return to the oven for a further 30 minutes or finish cooking on a pre-heated barbecue.

For the marinade:
2 tablespoons vegetable oil
2 tablespoons demerara sugar
2 tablespoons soy sauce
2 tsp fresh ground ginger
1 teaspoon ground cinnamon
1 teaspoon ground thyme
½ teaspoon ground cayenne pepper
½ teaspoon ground black pepper
1 large onion, peeled and chopped
5 garlic cloves, peeled and chopped
½ teaspoon Tabasco sauce
