Background Info:
Not exactly an authentic Chinese recipe, but tasty and quick.
Good on its own but even better with fried rice.

Cooking Instructions:
Add the oil to a wok and heat until starting to smoke.
Add the chicken, carrots, spring onions and red pepper. Stir fry until the chicken is cooked through (about 4-5 minutes).
Add the soy sauce, honey and tomato purée. Simmer for 5 minutes, stirring constantly.
Add the noodles, stir through and cook for a further 30 seconds.
Add the coriander, stir and serve.
Ingredients:
1 tbsp vegetable oil
½ tbsp sesame oil
500g boneless, skinless chicken breasts, cut into thin strips
2 carrots, peeled and thinly sliced
6 spring onions, trimmed and cut into lengthways into julienne strips
2 clove garlic, crushed
1 red pepper, cored, de-seeded and cut into strips
1 pack medium egg noodles, soaked and ready to use. (can be substituted for straight to wok noodles)
75ml light soy sauce
1 tbsp runny honey
1 tbsp tomato purée
1 small bunch coriander, de-stalked and roughly chopped
