This Irish dish is also known as Champ in Northern Ireland and was traditionally eaten at Halloween. Historically this was a main meal in itself, but nowadays would be considered an accompaniment to a meat dish. No. of Servings:

Peel the potatoes and chop into quarters. Boil the potatoes in lightly salted water until cooked.
Whilst potatoes are cooking, trim any woody stalks from the kale and discard. Chop the leaves into small pieces.
Chop the bacon into small pieces.
Whilst the potatoes are cooking; add the kale leaves and bacon to a saucepan of water, bring to a boil, then turn down the heat to a simmer.
Drain the potatoes when cooked, return to the saucepan and mash to a smooth consistency, adding plenty of butter and a little cream as required.
Drain the cooked kale and bacon and stir through the mashed potato along with the onion purée.
Serve hot, with another knob of butter on top
