Beef in Guinness

Cooking Instructions:
Cut the beef into chunks.
Add the flour to a plate and season with a little salt and a good grinding of black pepper.
Roll the beef in the seasoned flour to coat all over.
Heat the fat in a casserole dish, add the beef and brown the meat whilst stirring. This is to seal the meat rather than cook it.
Remove the meat from the casserole dish with a slotted spoon, leaving the fat on the heat.
Add the onions and fry until translucent but not coloured.
Re-introduce the beef, add the carrots, Guinness and water.
Bring to the boil then reduce the heat to a gentle simmer.
Cover and cook for 2 hours, checking regularly and adding more liquid or seasoning if required.
Ingredients:
1kg beef stewing steak
2 tbsp flour
Salt & ground black pepper
Beef dripping or lard
2 large onions, chopped
6 medium carrots, peeled and cut into large chunks
200ml Guinness
100ml water
Fresh parsley, chopped
