Cooking Instructions:
Grease the inside of a deep medium sized casserole dish.
Put a layer of potatoes on the bottom of the dish, followed by a layer of onions. Sprinkle with some of the chopped herbs and add a layer of meat. Repeat the layering process and end with a layer of potatoes on top.
Pour the stock over the top. Place on a high heat.
Once boiling, turn down the heat and simmer gently for 1½ hours, until meat is tender. Check regularly and top up with a little water if required. Be careful not to add too much as a good Irish stew should not have too much liquid.
Ingredients:
450g lamb shoulder, diced
8 medium potatoes, scrubbed and sliced
1 large white onion, roughly chopped
1 small bunch of fresh parsley, chopped
1 small bunch tablespoon fresh thyme
Salt & milled black pepper to season
450ml vegetable stock
