In a frying pan, cook the bacon in vegetable oil or a little lard until starting to crisp. Remove from the pan and set aside, leaving the fat in the pan.
Fry the sausages until cooked through, remove, chop up and set aside.
In the frying pan, add the onions and garlic and cook the onions until soft and translucent.
Use a little of the fat from the frying pan to grease a casserole dish.
Place a layer of the potato on the bottom of the pan followed by a layer of onion and half the bacon and sausages, seasoning each layer as required. Repeat the layering finishing with a layer of potatoes sprinkled with parsley.
Pour over the cider, cover and simmer for an hour, checking regularly to see if more fluid is required.
