Key Lime Pie

One of my favourite desserts, more 'zing' and aromatic depth than the 'zingyest' Lemon Meringue Pie! No. of Servings:

Preheat the oven to 180 C/350 F/Gas 4. Whisk together the egg yolks, condensed milk and half the lime zest, then slowly stir in the lime juice. Pour the mixture into the pastry shell and bake it for 20 minutes. Let the pie cool on a wire rack before refrigerating it for about 2 hours or until chilled.
Decorate the top with pinches of lime zest. Or for a special occasion, whip the double cream, fold in the sugar, split a vanilla bean length wise and scrap out seeds and add. Stir in the rest of the lime zest, and mix well, until vanilla evenly distributed, then dollop it on top of the pie.

150ml freshly squeezed lime juice
240ml double cream
1 tbsp unrefined caster sugar
