Preheat oven to 180C/350F/Gas 4. Line a 10in greased pie dish with the pastry and put in the fridge. Melt the butter and chocolate in a bowl over gently simmering water. The base of the pan must not touch the water!
Remove from the heat and continue to stir it as it begins to cool. Whisk together the dissolved coffee granules, sugar, syrup and vanilla seed from the split bean, then stir in the slightly cooled choclate mixture. Pour into the pastry shell.
Bake in the oven for about 35 minutes, or until the filling puffs up and forms a crisp, cracked crust and the pastry is golden and cooked through. Cool on a wire rack, during which time the filling will deflate , but inside will cool to a squidggy, creamy fudginess. Serve at room temperture slathed with whipped cream that you have beaten to a soft stiffness and added to an equal amount of Fromage Frais

3 large eggs
1 tbsp espresso coffee granules dissolved in 2 tbsp soured cream
170g granulated sugar
3 tbsp golden syrup
1 Epicure Vanilla bean
1 pack of fresh Shortcrust pastry
