Mediterranean Bean stew with chorizo

Cooking Instructions:
Skin the sausages and if they are long, chop into 1 inch pieces
Chop onion roughly and fry gently in olive oil until soft (about 10m)
Add garlic and sausages and fry for 2 or 3 minutes
Add the marsala and boil rapidly until evaporated
Add tin of tomatoes, beans and bay leaves, season and stir well to combine
Simmer gently for about 20mins
Stir in the lemon juice and parsley and serve in large bowls with crusty bread
Ingredients:
1 onion
2 cloves garlic
1 tbsp olive oil
4 chorizo picante sausages
1 glass marsala
1 tin chopped tomatoes
1 packet of Epicure Mediterranean Bean Mix
3 bay leaves
smoked sea salt (e.g. Maldon) and black pepper to taste
2 tbsp parsley
Juice of half a lemon
Recommended Wine:
Red : Any Red Wine
