Grilled courgettes with goat's cheese and walnuts

Background Info:
A light lunch dish which makes the most of a glut of courgettes.
Quantities given can be multiplied up for larger (vegetarian) main course servings.

Cooking Instructions:
Wash the courgettes and top and tail. Slice each one lengthwise and then cut each half into 3 sections.

Bring a saucepan of salted water to the boil and blanch the courgette 'logs' for 2/3 minutes until slightly soft and bright green.

Drain thoroughly and, in a mixing bowl, coat with the olive oil.

Preheat the grill to high and line the grill pan with foil.
Place the cougettes, cut side downwards, on the foil and grill until the skin is speckled with black.

Next, turn the courgettes over so the cut side is uppermost and sprinkle with the walnuts.
Place the rounds of goat's cheese on the courgettes and grill until starting to turn brown.

Serve on a bed of lettuce with a good scrunch of black pepper.
Ingredients:
4 medium courgettes
2 tbsp olive oil
125 gr walnuts, rouughly chopped
goat's cheese log, sliced into 8 rounds
ground black pepper
