Soften the mushrooms in butter and oil in a deep frying pan, then remove from pan and keep warm
Soften the onions, with a little more butter and oil if needed,
Add the spelt, and stir to coat it in the oil
Add the stock, a little at a time, and simmer, stirring often (if more stock is needed than is prepared, add a little more boiled water)
Put the mushrooms back in the pan & stir well
When the spelt is cooked to being nutty and "al dente" (not soggy!) serve up.

250g chestnut mushrooms, sliced or halved
1 funghi porcini stock cube, made up to 1 pint
