Top and tail the green beans, blanch in boiling salted water until tender and drain. Place in a bowl with the tomatoes and olives, toss with olive oil and a pinch of salt & pepper
Squeeze the juice of ½ a lemon over the salmon fillets on both sides, add salt & pepper and drizzle with a little oil
Preheat oven and a roasting dish at the highest temperature
Place the salmon at one end of the roasting dish
Toss the basil, olives, tomatoes and beans together and place at other end of the roasting dish
Roast for 10 minutes, remove and serve with lemon quarters and warm bread
