Luscious Lemon Cake

Grease & line a 2lb loaf tin. And pre-heat oven at gas mark 4/ 180ºC.
Cream fat and sugar, add eggs, flour & finely grated lemon rind & milk.
Mix well into a soft dropping consistency. Put in tin, smooth top & bake for 40-45 minutes.
Syrup: mix sifted icing sugar & lemon juice & pour over the cake as soon as it comes out of the oven. Leave in tin until completely cold.
Whip the double cream and separate the raspberries from the syrup.
Serve in slices with a spoonful of whipped cream and raspberries.

4oz margarine
6oz caster sugar
60z self raising flour
4 tbsp milk
2 large eggs
Grated rind of 1 lemon
Syrup
3 rounded tbsp icing sugar
3 tbsp fresh lemon juice
To serve with:
250ml of double cream
Raspberries (Epicure tinned raspberries in syrup)
Vegetarian
