Cooking Instructions:
Wipe chicken pieces & make 2-3 slashes into the flesh. Spread with softened butter & season. Mix onions & cheese with breadcrumbs & herbs.

Arrange in a lightly oiled roasting tin or ovenproof dish & press crumb mixture lightly on top.

Bake in 190º for 1 hour, until chicken is tender and the topping is crisp.
Ingredients:
Pieces of skinned chicken Breast (depends on how many are being served)
1 ½ - 2oz softened butter or margarine
1 pinch salt & pepper
1 medium sized onion, finely chopped
3oz cheddar cheese, finely grated
2-3oz brown breadcrumbs
1 heaped tsp parsley or tarragon, blended.
