Leek and Potato Soup

One cold afternoon afternoon I popped into Petersham Nursery and the most delicious bowl of soup of my life. I asked the chef what the magic ingredient was and he said Thyme. It really makes all the difference. I never got the full recipe but this is my never fail version. No. of Servings:

Dice 1 large potato - and fry this gently in a large saucepan in two tablespons of butter.
Chop 2 leeks discarding the green leafy bits and add to pan.
Allow to sweat in the butter for 5 mins.
Add a few sprigs of thyme, a pinch of salt and pepper, a bay leaf and 13/4 pints of good vegetable stock.
Simmer for 20 - 30 minutes.
Remove Bay Leaf and Thyme - discard.
Blitz up until smooth.
Serve with crusty bread.
