Chilli Butternut Squash and Feta Couscous

Cooking Instructions:
Pre-heat oven to 180 degrees.
Peel and dice the butternut squash into 1cm cubes then put into an ovenproof dish. Drizzle with olive oil and scatter with sea salt and the chilli flakes. Roast for 20-30 mins or until tender.
Place the couscous in a bowl and add the crumbled stock cube. Pour boiling water into the bowl until it just covers the couscous.Leave for 5 mins.
Whisk together the lemon juice and mustard. Slowly drizzle in 2 tbsp of olive oil until the dressing emulsifies.
Fluff up the couscous with a fork. Add the squash, red onion, feta and dressing. Mix together.
Serve in warm bowls.

Brilliant recipe! can also be eaten cold, delicious!
Ingredients:
1 medium butternut squash
175g couscous
150g feta cheese, diced
1 small red onion, diced finely
1/2-1 tsp chilli flakes (depending on how spicy you want it)
1 vegetable or chicken stock cube
Juice of 1 small lemon
1 tsp Dijon mustard
Olive oil
