Cheddar cheese souffle

Heat oven to 190°C, 170°C for fan ovens.
Grease 4 250ml ramekins with extra butter.
Melt butter in a saucepan, and then stir in flour.
Remove from heat and gradually add milk until mixture is smooth.
Return to heat, bring to boil and cook for 1 minute stirring continuously until thickened.
Remove from heat, add cheese, mustard and season, stir in well and leave to one side.
Whisk egg whites in bowl until stiff peaks form.
Beat the egg yolks and chives into the cheese mixture, and then fold in the egg whites.
Divide mixture evenly into the 4 ramekins, place on baking tray and cook for 15-20 minutes until golden and risen.
Serve immediately.

80g cheddar cheese, grated
1 tsp of Dijon mustard
3 large eggs, separate yolks and whites.
2 tbsp finely chopped chives
