Spicy Eggs

Finely chop onions
Finely chop the ginger and chillies together
Remove the skin off the tomato

Heat the frying pan with 2 tbs oil on a meduim heat.
Fry onions until golden brown.
Add ginger and chillies, fry for a further 2 mins
Add tomato and fry until tomato turns dark red.
Spread out the mixture evenly, then crack all six eggs into the frying pan.
Season with salt and pepper, and garnish with corriander.
Cover and simmer until egg white is firm.
Serve with toast, Naan bread or Chappatis.
