Curried potatoes with peas

Cut the potatoes into 2cm (1") dice and boil for 10-15 minutes or until tender adding the peas 3min before they are done. Drain and set aside.

Heat the oil in a non-stick frying pan and add the cumin seeds and crushed garlic. Cook for around a minute and then add the chopped onion and continue to cook until softened.

Stir in the tomatoes and curry powder and cook over a low heat for 3-4 minutes.

Gently stir in the potatoes and peas and serve.

Great served with dry fried or grilled chicken cooked with a pinch of cumin and black pepper.
6 new potatoes peeled and chopped into quarters.
1 tsp of vegetable oil
1 pinch of cumin seeds
1 clove of garlic
1 onion, chopped
110g of peas
1 small tin of chopped tomatoes
1 tsp of curry powder
