Grease a flat baking tray with butter.
Pre-heat the oven to 170oC
Cream together the butter and sugar until light and fluffy.
Gradually add the beaten egg, mixing well each time.
Sieve in the flour into the mixture and mix until a tough dough is formed.
Mix in the chopped white chocolate.
Spoon dollops of the mixture onto the baking tray. You can use a teaspoon or tablespoon depending on how big you want the cookies. Remember to leave room between each dollop as it will expand in the oven.
Cook in the oven for 12mins, until golden brown.
Remove from oven and set on a wire rack to cool.
