One of the first recipes I ever learnt and memorised, an easy dish and always a favourite with my guests.

Cooking Instructions:
Chop the lemon into 4 quarters and trim the chop thyme into fine pieces.

Season the skin of the partridge with salt and pepper and then wrap in a slice of smoked bacon. Then take one quarter of the the lemon and drizzle the juice all over the partridge before stuffing the bird with the remaining quarter. Once this is done sprinkle with some of the thyme.

Repeat this for all 4 of the birds.

When ready put into the oven on 180oC for around 30 minutes ensuring that you baste the birds.

At this point take off the bacon to allow the skin to crisp for 10 further minutes. Make sure the juices run clear and then serve with roasted asparagus and new potatoes.

4 partridges
4 slices of smoked bacon
1 lemon
Fresh thyme
Salt
pepper
Recommended Wine:
White : Any White Wine
