Cover prepared apple with water and a pinch of salt to prevent browning. Sieve flour, spices into a bowl. Rub in softened butter until mixture resembles breadcroumbs. Stir in sugar and then carefully stir in the sweet mincemeat and eggs. Add milk until mixture drops from a wooden spoon when held upside down over bowl. Grease a microwavable bowl with butter. Rinse off the apple segmets under a cold tap. Line the bottom of the bowl with apple. Spoon mixture over. Smooth top and cover with clingfilm. Pierce several holes in the film to allow steam to escape. Cook in microwave for approx. 8 minutes on full power, depending on microwave. Allow to cool slightly before removing clingfilm. Serve with either custard or cream to taste.

4ozs butter
3ozs brown sugar
approx. half jar sweet mincemeat
2 beaten eggs
milk to mix
1 desert apple, peeled, cored and sliced into segments
