Meanwhile..

Heat the oil in a large wok over medium heat. Add the garlic and onions and saute for 4 minutes, then add red bell pepper and carrots and saute for a further 4 minutes but sure they don't burn.
Add red wine and raise heat, boil for 1 minute then reduce heat to medium low, add mushrooms and cook for 3 minutes.

Add tomatoes, basil and rosemary and season with salt and pepper to taste. Simmer for 10 minutes and serve sauce over cooked tagiltelle.

1 tablespoon olive oil
2 cloves garlic, crushed
1 red onion, chopped
1 red bell pepper
1 carrot, grated
100ml dry red wine
50g rhydrated porcini mushrooms
400g chopped tinned tomatoes
2 teaspoons chopped fresh basil
1 teaspoon dried rosemary, crushed
salt and pepper to taste
