Chicken and mushroom Cacciatore Casserole

Cooking Instructions:
Preheat oven gas 4, 180C 350F

Put the salt, pepper, flour , rosemary and chopped chicken into a plastic bag and coat the chicken.

Heat oil in frying pan and fry the chicken, onions and garlic until lightly browned, place in a casserole dish.

Add mushrooms, tinned tomatoes and chicken stock to the casserole dish with the chicken etc and stir together.

Cover and cook the casserole in the oven for 1 hour at gas 4, 180C 350F

Can be served with potatoes and veg or rice.
Ingredients:
4 cloves of garlic finely chopped
2 onions diced
1 chicken stock cube
4 chicken breasts, diced.
100g Dried mixed mushrooms (Oyster, Porcini and Shittake) rehdrated and sliced.
Olive oil
1 tin of chopped tomatoes
2 tbs plain flour
salt and pepper
dried or fresh rosemary

Casserole dish with lid
