Cod foil dinner

Using Creative Cooks Mediterranean Bean Mix No. of Servings:

20min(s) Cooking Instructions:
Heat oven to 400F/ GM6 / 200C
Use a peeler to take the skin off of stalk of the broccoli, and remove any leaves on the stem
Steam broccoli for 5 minutes
Place 1/4 of Bean Mix on the foil
Place cod loin on Bean Mix
Place 3 cherry tomatoes on both sides of cod loin
Place 2 broccoli spears on top of fish
Repeat
Close up foil into air tight parcels and place on baking tray.
Bake in hot oven for 20 minutes
To serve:
Make a donut of rice on each plate.
Use a slice to lift fish and then pour beans and tomatoes into the donut then place fish on top.

It is May in the UK and so asparagus is in season. Substitute the broccoli with pencil thin asparagus - delicious

1 pack Creative Cooks Mediterranean Bean Mix
24 cherry tomatoes
8 Tender stem broccoli spears
4 large pieces of aluminium foil
Cooked rice for 4 people
