Lime Chicken with Mint

Cooking Instructions:
1. Mix the mint, honey and lime juice in a large bowl and season with salt and pepper. Add the chicken to the marinade , turning to coat evenly.
2. Cover the Chicken with cling film and put in fridge for at least 1 hour. Then remove the chicken from the marinade and drain. Set aside the marinade.
3. Preheat the grill to a medium heat then place the chicken under the grill for 20 to 25 minutes, or until the chicken is tender ( turn the chicken frequently whilst basting with the marinade.
4. For the sauce combine all the sauce ingredients into a bowl and mix well.
5. Serve with fresh salad.
