Melt the butter in a pan on a medium heat.
Add the onion, garlic and pancetta. Cook until the onions are soft and starting to colour, but not brown.
Transfer to a bowl and add the remaining ingredients.
Season well and mix thoroughly.
Use to stuff your turkey/chicken.
Can be cooked separately by rolling into balls.
Place on a greased baking and put in the oven 30 minutes prior the end of the bird's cooking time.

400g cooked and peeled chestnuts, finely chopped
1 large white onion, finely chopped
2 cloves of garlic, crushed
120g diced pancetta
225g sausagemeat
Small bunch of fresh sage, finely chopped
1/4 tsp ground nutmeg
Salt and milled black pepper to season
