Porcini Mushroom, Red Wine and Roasted Garlic Dressing

Pre heat the oven to 140°c
Place the garlic (separate the cloves and remove skin) on a roasting tray and drizzle 2 tablespoons of olive oil over the cloves. Place in the oven to cook for 30 mins or until the garlic is soft. Once cooked place to one side to cool.
Crush the cooled garlic and put into a bowl with Dijon mustard, lemon juice and red wine vinegar. Whisk in the extra virgin olive oil followed by the Porcini & Chianti Reduction. Add the chopped parsley , then season with sea salt and freshly ground black pepper to taste.
Chef's Tip:
This can be made ahead of time and stored in the fridge for up to two weeks.

120g Chianti & Porcini Mushroom Wine Reduction
4 Roasted Garlic Cloves - crushed
60g Red Wine Vinegar
130g Extra Virgin Olive Oil
1 tbsp Dijon Mustard
1 small bunch Parsley - finely chopped
2 tbsp Lemon Juice
Sea Salt and Ground Black Pepper - to season
