Braised Red Cabbage with Merlot and Fine Herbs

Cooking Instructions:
Preheat the oven to 160°C.

With the exception of the butter, mix all of the ingredients in a bowl and then transfer the mixture to a casserole dish.

Dot the butter on top of the cabbage mix, cover with a well fitting lid or a piece of parchment paper.

Leave to cook for approximately 1.5 hours stirring occasionally.

Serving Suggestions:
A versatile accompaniment to all meat dishes. Why not try with your Sunday roast or with gammon and other pork cuts.

Would also compliment confit of duck or any game.

1 120g of Merlot & Fine Herb Wine Reduction
1 small Red Cabbage (500g) - finely sliced
1 Red Onion - finely sliced
1 Bramley Apple - peeled and grated
3 tbsp Red Wine Vinegar
½ tsp Mixed Spice
2 tbsp Muscovado Sugar
1 medium Orange -Juice and Zest
Sea Salt
Ground Black Pepper
70g Butter
