This was a recipe given to me by my mother and I have regularly used it for parties and special occasions. It is both refreshing and tasty.

Cut the pineapple in half lengthways and take out the flesh and the juice. Scrape out the shells and put to one side. Take out the hard part in the middle of the pineapple and throw it away. Put the shells in the freezer whilst you prepare the ice cream.
Blend all the pineapple flesh in a blender until it is smooth. Whisk the egg whites until they are stiff then gradually add the sugar, still whisking. Now fold in the whipped cream and the pineapple puree. Spoon the mixture into the pineapple shells, filling to the top and then cover them with either cling film or kitchen foil. Freeze for about 3and a half hours or until frozen. Any left over mixture can be put in a bowl and frozen to eat later. When the mixture is frozen cut each half of pineapple into four pieces lengthwise and serve with scoops of the remaining ice cream that has been frozen separately. Serve with a little raspberry coulis. Delicious!!!!

1 large pineapple
6 ounces caster sugar
3 egg whites
10fl.oz. carton of double cream - whipped.
Raspberry coulis
