Egg & Potato Bhaji

Preheat oven to 180ºC
Place the casserole disk on the hob. Heat the oil and fry the onions and garlic over a medium heat until the onions are starting to brown. Add the spices, stir in and heat for a further 2 minutes. Add the chopped tomatoes and potatoes then place the lid on the casserole and place in the pre-heated oven.
After 30 minutes add the boiled eggs and cook for a further 5 minutes
(Check occasionally during the cooking time and add a little hot water if getting dry).
Remove from the oven, season if required.
Serve with a sprinkling of the chopped coriander.
Ingredients:
Vegetable oil for frying
2 x medium white onions, thinly sliced
2 x cloves of garlic, finely chopped
1 x dessertspoon of ground ginger (or equivalent of grated root ginger)
1 x dessertspoon of ground cumin
1 x dessertspoon of turmeric
1 x teaspoon of dried chilli flakes
1 x 400g tin of good quality chopped tomatoes
6 x hard boiled eggs, halved
6 x egg sized new potatoes, scrubbed and par-boiled then halved
Salt & ground black pepper to season
1 x small bunch of coriander, stalks removed and coarsely chopped Equipment:
