Tortiglioni with Baby New Potatoes, Green Beans and Basil Pesto Salad

Cooking Instructions:
Put 2 medium sauce pans of salted water on the boil for potatoes and pasta. Put a small saucepan of water to boil for the beans.

Place the washed baby new potatoes in a saucepan of salted water with a couple of peeled cloves of garlic and bring to the boil. Then simmer until the potatoes are cooked.

In another pan boil the beans until they are cooked but not too soft, they still need to crunch. Strain and set aside with the potatoes.

While the potatoes are boiling, cook the pasta according to the packet instructions, drain well and place in a large bowl. Add the cooked beans and new potatoes and toss gently with the Epicure Basil Pesto, season accordingly with salt and pepper.

To serve:
Grate a handful of pecorino cheese over the top and garnish with fresh basil and a good glug of your best quality extra virgin olive oil.
