grease a removeable bottom flan dish.
line with short crust pastry.
put a covering of sausage meat in the dish, approx 1-2cm deep.
then add a layer of lean bacon, covering the sausage.
make 4 indentations with the back of a spoon, in the sausage and bacon.
crack 4 eggs into the indentations and let the yolks rest there, and let the egg white cover the next layer.
add a shortcrust pastry top to the pie. brush with egg and milk and bake in a pre heated oven for 20 minutes on 200degrees c.
reduce heat to 180 degrees c, and bake for a further 30 mins.
remove from flan dish when it cools down.

shortcrust pastry.
8oz plain flour.
2oz lard
20z marg
pinch of salt
4-5 tblesp water.

4 eggs
milk to brush on pastry
