Tuscan Bean Mix Soup with Ham

This is healthy, easy and it can be altered to suit your tastes depending on vegetables you have on hand. Sometimes I add grated corgettes and/or mushrooms.
Combine all ingredients and bring to a boil. Lower the heat and simmer, covered, for 25 minutes. Add water to thin. Mash some of the bean to thicken. Season with salt & pepper to taste. Serve with crusty bread.
Of course it's nice as leftovers too.

1 cup chopped cooked ham
1 large finely chopped carrot
2-3 finely chopped celery sticks
1 350g Creative Cooks Tuscan Bean Mix with Pearl Barley
2 cups vegetable or chicken broth
2 garlic cloves minced
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp turmeric
1 bay leaf
1 tsp dried sage
1 tb butter
