A simple way to add great flavour to sausages, very easy to do but still impress with the flavour combination.

Cooking Instructions:
Pre heat oven to 200C/180C fan/gas 6.

Add the onions and peppers in a roasting tin, drizzle over the oil and vinegar and season before roasting for 10 mins.

Add the sausages, tomatoes and thyme in and around the veg, drizzle over the honey and extra balsamic and cook for 30 mins turning the sausages halfway.

Once the sausages are cooked and everything is golden and sticky remove from oven and serve with mash.

Allow extra time if you are using frozen sausages, or defrost first.
Ingredients:
3 red onions cut into wedges
3 red peppers deseeded and cut into quarters
2 tbsp olive oil
2 tbsp balsamic vinegar- plus extra for drizzeling
8 sausages
250g cherry tomatoes
few thyme sprigs or you can use 1tsp of dried.
2 tbsp clear honey
