Chicken in a Balsamic and Orange sauce

Put the chicken between pieces of cling film and flatten slightly (using rolling pin or bottom of a pan). Unwrap and sprinkle plenty of black pepper on both sides.
Heat the oil in a pan over a medium heat, and then fry the chicken until cooked through, turn half way through.
Pour 2 tbsp of balsamic vinegar over the chicken; add the orange juice and stock. Bring to the boil, lower the heat and bubble gently for 10 minutes spooning with the sauce frequently and turning chicken halfway through.
Add the honey and the rest of the vinegar stir through for another 5min.
Remove chicken and put to one side leave the sauce in the pan. Add 2 tsp of gravy granules to the pan and continuously stir until thickened. Then return the chicken to the pan.
To serve put chicken on the plate and pour sauce over.
Can be served with mash and peas, rice or why not try with chips if you feel like a treat.

150ml fresh orange juice
150ml chicken stock
2 tsp chopped fresh rosemary leaves
1 tbsp Honey
Black pepper
2 tsp chicken gravy granules
