Jammy Steamed Pudding

Cooking Instructions:
1. Lightly butter your pudding bowl and spoon the jam into the bottom.
2. Put the butter, sugar, eggs, flour and baking powder into a large mixing bowl. Beat until smooth and thoroughly blended. Add enough milk to give a dropping consistency.
3. Spoon the mixture into the pudding bowl and smooth off the surface. Then cover with a buttered greaseproof paper and foil (make a pleat in the middle as this will make space for pudding to rise) secure with string.
4. Place the bowl in a steamer or saucepan of simmering water, making sure the water comes halfway up the side of the bowl. Cover and leave to steam on a low heat. Top up with boiling water as needed and leave to cook for 1 ½ hours. When cooked leave to stand for 5 minutes, then turn the pudding out onto a warm plate ready to serve.

3 tbsp jam;
125g (4oz) caster sugar;
2 eggs, beaten;
175g (6oz) self-raising flour;
1 tsp baking powder;
about 1 tbsp milk Equipment:
