Easy Tomato & Basil Soup

1.Heat the oil in a saucepan, add the onion and cook for 8-10 minutes until softened and lightly golden.
2.Take half the tomatoes and halve them. Add to the pan with the onion and cook for a further 5 minutes, breaking down with a spoon.
3.Pierce the remaining tomatoes and place in a bowl of boiling water for 2 minutes to remove the skins.
4.Cut into chunks, removing the seeds and set to one side.
5.Place the onion mixture in a blender with the stock and blend until smooth.
6.Pass through a sieve to remove skin and pips and return to the pan with the tomato juice, seasoning, half the basil and diced tomatoes.
7.Heat through and serve sprinkled with the remaining basil and swirled with cream.
8.Delicious served with the warm freshly baked bread.
