Background Info:
Don't throw away bananas that are past their prime. The softer they are the better the banana bread.

Cooking Instructions:
Pre-heat oven to 180ºC
Add all the ingredients except the dried fruit to a mixing bowl and mix together thoroughly.
Fold the dried fruit into the mixture.
Spoon into the loaf tin and level.
Bake for 1½ hours.
Check the loaf is cooked by pushing a skewer into the middle. If it comes out clean the loaf is ready.
Allow to cool in the tin for 20 minutes before turning out.
Ingredients:
225g self raising flour
100g butter
150g caster sugar
3 x bananas, medium sized
½ tsp salt
2 eggs
1 tsp vanilla extract
175g mixed dried baking fruit

1kg non-stick loaf tin
