Mussels in curry sauce

Clean and de-beard the mussels.
Put the oil in a large pan and sweat off the shallots, add the garlic and cook for a further minute.
Add the white wine and seasoning, stir then add the mussels, shake the pan then put the lid on. Shake the pan periodically and keep checking the mussels, they are cooked when they are open.
Meanwhile, beat the creme frais with the curry powder until thoroughly mixed.
Once the mussels are cooked drain off the liquid, then add the curry cream and stir, spoon into two large bowls and serve with crusty french bread and ice cold white wine.

250 ml of white wine
crushed black pepper
Splash of olive oil
one pot of creme frais
2 desert spoons of curry powder
