Place the chicken and onion in a food processor and pulse until the chicken is minced. Transfer to a bowl.

Grate the courgette and gently squeeze out any excess water. Add to the minced chicken with the mint, season well and mix together. Shape into 4 burgers, then chill for 30 minutes.

Brush the burgers with oil and place under a moderate grill for about 6-8 minutes each side until cooked through.

Meanwhile, mix together the dip ingredients.

Warm the pitta breads, split and fill with lettuce. Add a burger and spoon on the dip.
500g skinless chicken breast, chopped
1 small onion, finely chopped
1 medium courgette
2 tbsp fresh mint, chopped
salt and freshly ground black pepper
1tbsp olive oil

Mint dip
· 100g natural probiotic yoghurt
· 2tbsp fresh mint, chopped
· pinch of cayenne pepper

· 4 Wholemeal pitta breads
· 160g pack shredded iceberg lettuce
