Background Info:
A savoury Fishy Starter to get the taste buds going with a glass, perhaps, of Prosecco.
A frivolous little starter before the more grandiose main course to follow!

12min(s) Cooking Instructions:
(1) Melt Butter, add Flour, gradually add Milk
(2) Bring to simmering whilst stirring all the time
(3) Cook for 2/3 minutes after adding Cheese/Chives/S&P
(4) Fill 6 Ramekins with sliced Egg and thinly sliced Tomato*
(5) Pour your mixture of (1) (2) and (3) over each, and bake uncovered for 10 minutes at 180 degrees
(6) Serve immediately with freshly chopped Parsley topping.
* Pre-prepared to save you time
* The Hard boiled Eggs/Chives/Parsley
All can be prepared/ 'fridged and covered ' before needed
Ingredients:
One and a half ozs each of:
Full fat Butter, Plain Flour, and grated Strong Cheddar Cheese.
12 fluid ozs of Full Fat Milk.
6 ozs large Prawns or Crayfish Tails (already cooked.)
3 Hard boiled and sliced free-range medium sized Eggs.*
3 Medium Vine Tomatoes.
4 ozs freshly chopped Chives*.
A little Salt & Black Pepper to taste.
Chopped Parsley for topping*.
1 oz weight = 25 g approx
1 oz fluid weight = 25 ml approx Equipment:
6 Oven proof Ramekin dishes.
For presentation - 6 doylies on six side plates.
