This is one of my favourite recipe, so simple and full of flavour. Allow extra time for your choice of side dish, mash usually takes up to 20min.

Cooking Instructions:
Carefully score the underside of the chicken breasts in a criss-cross pattern with a sharp knife. Season with a little pepper and lay the chicken breasts next to each other and sprinkle over the parmesan, lemon zest and half the thyme. Make sure you turn the chicken so both sides are covered.

Wrap the chicken in the proscuitto, 2 slices per chicken breast. Drizzle with a little olive oil and sprinkle with the remaining thyme.

Cover the chicken with cling film and give them a couple of good hits with the bottom of a pan/rolling pin until they?re about 1-2cm thick

To cook the chicken put a frying pan over a medium heat, remove the clingfilm and carefully transfer the chicken breasts, into the pan and drizzle with some more Olive Oil.

Cook for 3 minutes on each side, turning halfway through, make sure the proscuitto is crispy.

Serve with mash and veg or salad in the summer.
Ingredients:
40g finely grated parmesan
1tsp of thyme (fresh or dried)
2 chicken breasts
Zest of 1 lemon
4 slices of proscuitto
Black pepper
Olive oil
