Lemonay spicy potatoes with roasted chicken

Cooking Instructions:
Preheat the oven to 200°C/400°F/gas 6.

Add poatoes to a pan of lightly salted water and boil for 10min and then simmer for a few minutes, drain and set to one side.

Put turmeric, zest of 1 lemon, ground cumin, coriander, red pepper, and fresh ginger into a bowl.

Cut 4 slices off the lemon and set aside. Squeeze the juice from the remainder of the lemon into the bowl and mix with spices and herbs.

Add the potatoes to the bowl with the chicken breasts, and toss everything around with a splash of olive oil and season well with salt and black pepper.

Remove the chicken, put the potatoes into an oven proof dish, add the tomatoes to the dish and mix with potatoes. Spread potatoes and tomatoes in one layer, and top with the lemon slices and then the chicken.

Drizzle with olive oil and cook in the middle of the oven for 25 to 35 minutes, until chicken is cooked through.

Serve as it is or with your choice of veg.
Ingredients:
Potatoes peeled and choped into small squares (enough for 2)
1.5 tsp Tumeric
Zest of 1 lemon
1tsp Cumin
1tbs Coriander (fresh or dried)
1 red pepper, roughly chopped
1 inch of fresh ginger, peeled and grated.
2 Chicken breasts
1 tin of chopped tomatoes
Salt and Black Pepper
